The best restaurants in the world according to The World’s 50 Best Restaurants

Since 2002, The World’s 50 Best Restaurants has published a ranking of the best restaurants and chefs. Candidates are determined by a jury of more than 1,000 people worldwide. These are top chefs, restaurateurs, critics, food travelers and other industry experts. The whole world is divided into 26 regions depending on the concentration of gastronomic thought: for example, France was assigned a separate region, and our country is included in the block “Russia, Central Asia and Eastern Europe”. Each has its own election commission of 40 people, its composition changes from year to year. Voting goes like this: an expert chooses the top ten restaurants in the world, with at least 4 to be located outside his region. A prerequisite is to visit each of the establishments at least once in the last 18 months and not have any economic ties with them. The cleanliness of voting is controlled by an independent audit agency Delotte.

A restaurant from Russia first entered the top 50 in 2011, then Anatoly Komm’s “Barbaras” took the 48th line. But as high as in 2018, domestic projects never turned out to be. The Moscow White Rabbit restaurant, led by chef Vladimir Mukhin, is on the 15th line of the list. Over the year, White Rabbit improved its position by eight divisions: in 2017, it ranked 23rd.

Other Russian establishments did not make it to the top 50, but two restaurants are on the extended list: Selfie in 70th place and Twins Garden in 72nd.

No.1 Osteria Francescana (Modena, Italy)

Massimo Bottura with the team
This is a small restaurant of the legendary chef Massimo Bottura. Francescana has an interesting story: at first the place almost closed, because the conservative locals completely did not understand the innovative cuisine. Many products enter the restaurant from their own farm, while other chefs buy at the local market. The menu is governed by seasonality, many dishes of vegetables and seafood. Especially noted here are anchovy fillets on an anchovy skeleton with juice from menton lemons, oysters with tapioca, champagne and pear.
